A rotative-system flake ice machine for the jobs cube ice cannot do. Flake packs around an irregular shape and chills by contact rather than by sitting next to something, which is why it is what a fishmonger's display, a butcher's counter, a supermarket fresh counter and a hospital or laboratory actually run on. It also holds product wet without bruising it, which cube ice does not. The machine is the same whichever way you install it. What changes is where the heat goes, and that is worth reading before you choose, because it is the difference between a straightforward delivery and a refrigeration contractor on site. Choosing the installation Compact is self-contained: the condenser is inside, so it is one delivery and one power supply, and all the heat it makes is released into the room it stands in. Split puts the condensing unit elsewhere, which moves the heat and the noise out of the production room. It runs on single-phase 230 V and it is the cheapest of the four, sometimes by a very wide margin. Remote keeps the compressor in the machine and puts only the condenser outside. Three-phase. CO₂ Split uses CO₂ as the refrigerant, which is where regulation is heading for larger systems. Split and Remote both need refrigeration pipework run on site, so budget for the contractor as well as the machine.
