Proofing cabinet sized to sit under an RM Forni convection oven and hold 8, 10 or 14 trays at 600x400 mm on a 75 mm pitch. Temperature is adjustable from 30 to 90 °C and a water pan raises chamber humidity between 60 and 90 per cent, so dough proves at a controlled rate instead of skinning over. Mechanical control gives a knob per function; digital electronic control sets every parameter of the chamber. The V versions add fan-assisted circulation for a more even climate across the full height.
