The RMBAKE big line is RM Forni's professional convection oven for bakery, pastry and gastronomy, taking 6 or 10 trays at 600x400 mm on an 80 mm rack pitch. Two reversing fans move the air in both directions so every tray bakes the same, steam is injected into the chamber for crust and volume, and temperature is adjustable from 30 to 280 °C. Mechanical control covers the essentials; digital electronic control adds programmes, baking phases, adjustable humidity and two air speeds. Electric and gas versions share the same chamber.
