Rotary rack oven for bread and pastry, built in Thiene by RM Forni. The trolley turns inside a stainless steel chamber while a reversing fan drives heat evenly around every tray, and a steam system feeds the chamber for crust development. Baking temperature runs to 380 °C. The oven is offered with electric, diesel, gas or pellet firing and with mechanical, digital or touch screen control, so the same chamber can be matched to whatever fuel is available on site.
